SERGIO: THANK YOU SO MUCH FOR THE RECIPES. I HAVE FORWARDED THEM ALONG WITH YOUR E-MAIL TO LORI. I’M SURE SHE WILL ALSO RESPOND WITH HER COMMENTS ON YOUR CLASS.
OUR CLASS IN BARCELONA WAS QUITE DIFFERENT THAN YOURS. IT WAS IN THE EVENING; WE PREPARED THE FOOD THEN SAT DOWN AND ATE IT AS A FORMAL DINNER. THIS WAS FINE, BUT IT MEANT THE CHEF PLATED THE FOOD AND WE WERE NOT INVOLVED IN THIS PART. IT WAS A LOVELY PRESENTATION AND I WOULD HAVE BEEN INTERESTED IN SEEING HER DO THIS.
WE WERE NOT IN THE CHEF’S KITCHEN, BUT THE KITCHEN OF THE OWNER OF THE COMPANY—. THE CHEF WAS NOT FAMILIAR WITH THE STOVE, THE COOKING UTENSILS, ETC. WE WASTED SOME TIME GETTING THE STOVE TO WORK AND THEN SHE BURNED ONE ITEM.
YOUR CLASS WAS FAR SUPERIOR. THE TRIP TO THE MARKET WAS AN EXPERIENCE NOT TO BE MISSED. OUR CLASS IN BARCELONA DID NOT INCLUDE A TRIP TO THE MARKET BECAUSE IT WAS ON SUNDAY—ON ANOTHER DAY IT WOULD HAVE INCLUDED THE BOQUERIA. I’M SURE IT WOULD HAVE BEEN WONDERFUL, BUT THAT MARKET IS SO HUGE AND CROWDED WITH TOURISTS IT WOULD NOT HAVE COMPARED TO THE ONE YOU TOOK US TO. ALSO, TRANSPORTATION WAS NOT INCLUDED IN BARCELONA SO IT WOULD HAVE BEEN VERY DIFFICULT FOR US.
ALTHOUGH WE THOROUGHLY ENJOYED THE BARCELONA CLASS YOUR CLASS WAS SO MUCH MORE ‘PERSONAL’ IN EVERY WAY. WE LOVED YOUR CHARM AND STYLE. THE RECIPES IN BARCELONA WERE MORE INVOLVED WITH CHOPPING VEGETABLES AND SUCH BUT WE WERE NOT INVOLVED WITH ALL THE STEPS. YOUR INSTRUCTION WAS MUCH EASIER TO FOLLOW, YOUR DISHES WERE MORE STRAIGHTFORWARD AND TASTED BETTER. THEY WERE THINGS I WILL PREPARE AT HOME—AS MAY NOT BE THE CASE WITH THE DISHES WE PREPARED IN BARCELONA. I WOULD COME BACK AND DO YOUR CLASS OVER AND OVER AGAIN, AND CANNOT SAY THE SAME OF THE CLASS IN BARCELONA. AS A MATTER OF FACT, I WAS SORRY WE DID NOT HAVE TIME TO DO YOUR WINE TASTING IN RONDA OR ANY OF THE OTHER TOURS YOU HOST. I WILL BE RECOMMENDING YOU TO ANYONE I HEAR THAT IS COMING TO SPAIN.
One thing I would note for both classes—and I’m sure this is a personal choice. I would have been happy to include other participants that I could get to know and talk to. I know both classes pride themselves in being private classes and this was absolutely wonderful. But we are very social people and would also have enjoyed interacting with others touring in Spain. Again, I know this is a very personal choice and not everyone else would share my opinion.
THERE IS ONE FURTHER THING I MUST ASK OF YOU. WE BOUGHT THE SPICES FOR KEBOB. COULD YOU LET ME KNOW IF THAT IS JUST SPRINKLED ONTO THE MEAT OR IF THERE IS OTHER PREPARATION INVOLVED? I THINK I REMEMBER YOU SAID ‘WHITE MEAT AND FISH’. IS THAT CORRECT?

Thank you so much for the wonderful recipes and photos! I just made the chocolate and almond cake this evening because I couldn t stop thinking about eating it! Buonissimo! I cannot wait to prepare the rest of the recipes for my family and friends.
More importantly, thank you so much for the wonderful experience of your Cooking Class. It truly was the best part of our trip. The opportunity to go to the market, have you as our guide, cook, and, most importantly, eat the wonderful dishes we prepared was an experience that I will treasure forever.
We will definitely have to do the tapas tour of Malaga the next time we return to Spain.

What can we say!? Professional, personal, creative, and very attentive. Alexis and I are both very good amateur foodies, and were wondering if there would be anything new. From your tour of the market (a story on its own) to your recipe selection...everything was excellent, challenging, and definately on the We Are Back Party menu. You are a real jewel.
My husband and I were very lucky to find Sergio`s Mediterranean cooking class on the web. I read positive reviews about his cooking skills and decided to give it a try. The food prepared was simple but very tasty. It made it look extremely easy to prepare all those dishes. I have already tried most of the dishes he prepared. George, my husband doesn’t stop in asking me to make the selection of tapas and the chocolate & almond tart!!!!

The cooking class is really fun and Sergio was excellent. Make sure in your cooking class he will prepare his famous Pasta with Malaga’s fresh clams with pesto sauce and the mixture of Tapas. I have tried to do them at home and I have become now very popular among all my friends and family. Thank you for the great tips you gave us during the class.

A part from watching Sergio, producing some incredible mouth watering dishes, eating what we prepared was an excellent experience. The trip to the Malaga market is a must for anyone visiting Malaga.
